Puerto Rico Pesach: An Introduction to Caribbean Root Vegetables and Plantains

Are you tired of the same rotation of starches during Pesach? Join us as we explore how to work with viandas, a category of ingredients in Puerto Rican cuisine which includes yuca (cassava), plantain, green banana, yautía (American taro) among others. Stephanie Kruskol will lead a participatory workshop, sharing her Puerto Rican heritage and providing recipes for other dishes to make at home. Together, we’ll make and enjoy a dinner of sancocho, a soup containing these vegetables.
